docs: refresh repository truth after Phase 61

Summary

Repository-wide documentation reconciliation against current origin/main (44ae3102ab202ee0dfc974ee0bc9624b9219ad2d, PR #111).

This PR:

• records Phase 61 / PR Phase 61: add persistent metadata-backed Genre browser #100 as completed and accepted;
• records PRs perf(metadata): optimize EPG refresh candidate query #102-perf(epg): throttle completed type snapshots #108 as completed Post-Phase-61 Performance Hardening (B1-B4);
• records Remote/Live Overlay hardening (fix(frontend): redesign VDR remote and isolate key presses #110) and backend-scoped Global Search (feat(search): add backend-scoped global search #111) as completed cross-cutting platform features without inventing a phase number;
• sets Phase 62 Identity, RBAC and Accountability as the next strict runtime phase;
• rewrites docs/NEW-CHAT-HANDOFF.md, docs/CURRENT.md, README, status, roadmap, phase map and indices around the same repository truth;
• adds Phase 61 and post-phase runtime closeouts;
• refreshes the architecture gap matrix, ecosystem parity audit, provider strategy, person contract, Client API snapshot and RESTfulAPI/Remote architecture descriptions;
• records the current RMETA bound as 128 people / 65,535 bytes and classifies Draft PR Preserve complete TVScraper cast for recording search #101 as an incompatible plugin-only increase;
• classifies Draft PRs fix(frontend): restore Android-compatible remote asset #112/fix(frontend): use a real photorealistic JPG remote #113 as competing old-base Remote asset proposals that must not both be merged;
• updates documentation consistency guardrails;
• preserves superseded long planning, architecture and SuiteBridge handoff versions under explicit history/ paths instead of deleting their evidence.

The refreshed documents distinguish:

• HISTORICAL
• SUPERSEDED
• DEFERRED

Accepted ADRs remain architecture decisions; implementation status is tracked separately.
