Closes #30.

Adds an explicit writable mode to the root-confined directory FUSE view. It supports create, write, truncate, rename, unlink, mkdir, rmdir, and fsync while retaining O_NOFOLLOW path walks and nodev, nosuid, noexec mount options. New files and directories use safe modes, and chmod masks file execute bits. Documents the persistence exception for Read & write sharing with Allow changes.

Validation: nix build .#docker-vm; focused dirfs unit tests (5 passing); ./tests/validation.sh; live RW-tier Docker checks for EROFS without Allow changes, host-owned nonexecutable writes with it, and symlink escape refusal.
