Fix swipe secondary-hold timer lifecycle

Summary

• keep the secondary-hold timeout in a ref shared across renders
• clear an existing timeout before starting another hold
• cancel timeout and animation work on gesture stop and unmount
• stabilize hold callbacks and their gesture dependencies
• add regression coverage for re-render cancellation and unmount cleanup

• npm run test -- --runInBand --no-watchman
• 41 suites passed, 402 tests passed
