Description

Replaces hardcoded Linux-specific Docker bridge IP (172.17.0.1) with host.docker.internal for cross-platform compatibility. The hardcoded IP fails on macOS, Windows, and custom Docker network configurations.

Changes:

config/prometheus/prometheus.yml: Replace all 4 occurrences of 172.17.0.1 with host.docker.internal
docker-compose.professional.yml: Add extra_hosts mapping for older Linux Docker versions
Add inline documentation explaining cross-platform approach

Docker Desktop for Mac (all versions)
Docker Desktop for Windows (all versions)
Docker Engine 20.10+ on Linux (via extra_hosts: host-gateway)

For older Linux Docker versions (<20.10), the extra_hosts configuration provides compatibility.
