Harden workflow boundaries and improve public guidance

Summary

• reorganize the public documentation and Daml tests around the pair, trade, order, pool, and LP workflows
• add a Canton/Daml primer, guided AMM walkthroughs, LocalNet guidance, and a proof map for new builders
• tighten caller authorization, read scoping, wallet authority boundaries, and registry discovery
• stage LP allocation discovery per operation while preserving deployed choice compatibility
• strengthen Daml invariants and focused workflow, lifecycle, conservation, and choice-context coverage
• align container builds and CI checks with the supported production runtime boundaries
