feat: full settings management from UI#27

Need to rethink settings management:

  • Global (user home-dir ~/.koan/) for things like models, profiles, coding agents, max subagents, etc
  • Per-project (.koan/ in repo dir) for other settings.. do we have any? AGENTS.md / CLAUDE.md management strategy? Well-known-paths? git worktrees or not?
