Remove MinimalHelpers.Validation project and update packages - #96

Removed the MinimalHelpers.Validation project and all related source files and references from the solution. Updated Microsoft.AspNetCore.OpenApi and Swashbuckle.AspNetCore.SwaggerUI package versions in MinimalSample and MinimalHelpers.OpenApi projects. Deleted version.json to remove repository versioning configuration.
