Follow-up to #1, targeting document-model-pipeline.

Adds anydoc as a submodule at anydoc/, pinned to v0.1.7, alongside the existing markitdown submodule (v0.1.6).

Why keep it in-tree:

No build wiring — the submodule is a reference checkout, not a dependency. Nothing in Gradle reads it.

git submodule update --init anydoc

The benchmark compares our Markdown against anydoc, and its parsers are the
reference for the document-model architecture. Pinning it next to the existing
markitdown submodule keeps both references at a known revision.

Pinned at v0.1.7.
