Neither the OTA self-update feature (PR #9) nor this branch's version history/rollback/SSH info work was documented anywhere -- add sections matching the README's existing per-feature documentation style.

PR #10 (version history/rollback + SSH info card) merged before this README commit was pushed, so it never made it into
main. This PR is just that one stranded commit: adds "Software updates & version rollback" and "SSH access" sections documenting the features from PR #9 and PR #10, neither of which was previously documented anywhere.
