Fix README clone URL

What changed

Updated the Quick Start clone command in README.md to use the current repository URL:

git clone https://github.com/kubedoio/rustchat.git

Why

The README still referenced the old rustchatio/rustchat location, which could send evaluators and contributors to the wrong repository during installation.

Impact

New users can now copy the documented clone command and reach the active RustChat repository directly.

Root cause

The repository was moved under the kubedoio organization, but the Quick Start URL was not updated.

Validation

• Compared the branch against main
• Confirmed the net diff is limited to one replacement in README.md
• No runtime tests required for this documentation-only change
