- NormalizeVersionTag now strips leading "v" instead of adding it
- Default proxy repo set to ghcr.io/hyperbyte-cloud/hyperbytedb-proxy
- Update ProxySpec.Image CRD default to match published registry
- Regenerate CRDs, install.yaml, and Helm chart templates
