Refactored TalaiotBuildService to use nested parameter interfaces (EnvironmentParams, SwitchParams) instead of a long list of flat parameters. This makes the configuration in Talaiot.kt cleaner and the interface definition more structured.
Ensured compatibility with Gradle Configuration Cache by correctly using Property<T> and @Nested annotations.
Also cleaned up unused files.

Grouped related parameters in `TalaiotBuildService.Params` using nested interfaces `EnvironmentParams` and `SwitchParams` to improve readability and maintainability. This change maintains compatibility with Gradle Configuration Cache by using `@get:Nested` and `@get:Input` annotations.
Deleted unused `InfluxDbMetrics` and `MetricSwitches` data classes as interfaces are used instead.
