Preserve CapCheck as a read-only portfolio demo

Summary

• preserve CapCheck as a read-only portfolio showcase after the hackathon
• keep the Supabase-backed Verified Feed and detail pages available
• replace retired live analyzer and refresh controls with clear archived-demo states
• update the README and environment example to match the final deployed architecture

Verification

• Node 22.19.0
• npm run lint
• npm run typecheck
• npm run test:unit — 324 passed, 6 credential-gated skips
• npm run build
• npm run test:e2e — 40 passed across desktop and mobile Chromium
• production-mode local smoke with only public Supabase configuration — 8 feed cards, read-only refresh notice, and retired analyzer notice rendered
• git diff --check

The private provider credentials will be removed from Vercel after this PR deploys. Public Supabase configuration remains protected by RLS.
