The dompurify bump (#220) regenerated docs/package-lock.json without
markdown-it-mathjax3, an optional peer of VitePress that math rendering
needs, so every docs deploy since has failed. The PR ran the native matrix
and the performance job, neither of which touches docs, but not the docs
build, so the break reached main.

- docs: depend on markdown-it-mathjax3 directly so a lock regeneration
  cannot drop it.
- docs.yml: build on pull requests with the same path filter (no Pages
  upload or deploy, cancelled when superseded); Rust cache saved from
  main only.
- native.yml, performance.yml: ignore docs/** and *.md, which no native
  build or measured benchmark reads.
