Fix phone Audio V2 start and gate TestFlight

What changed

• construct the Audio V2 capture binding before assigning it as active
• add a registered /ws/audio entry-point regression covering hello, phone-style duplex start, real Opus media, packet ACK, Redis durable ingress, and clean stop
• require the focused 44-test Audio V2 slice before compiling a new TestFlight IPA

Verification

• regression reproduced the production UnboundLocalError before the fix and passes after it
• focused Audio V2/durability slice: 44 passed
• all audio-named backend tests: 117 passed, 15 skipped locally because the isolated Mongo test port was not running
• deployed probe: 55/55 packet ACKs, clean stop, 57 durable + 57 realtime Redis events, completed Mongo capture, one 1.10-second canonical chunk
• clean backend CI: the new entry-point test passed; unrelated Timeline/Memory baseline failures remain in the full lane
