Version bump for the 2.1.0 release: pyproject.toml, canlab/__init__.py, and the demo builder's VERSION.

Also corrects the demo outro footer, which still claimed 540 tests (the count at 2.0.0). It is 676, from the same pytest -q run the README quotes.

What 2.1.0 contains

Five features (#16 to #21), their docs (#22), three defects found and fixed along the way (#23, #24, plus the big-endian DBC start bit inside #18), and the command line tour (#25).

  • Multi-frame reassembly: J1939 transport protocol and NMEA 2000 fast packets
  • Reference calibration: GPX, clock-offset search, overlap de-dup, a dialog off the GUI thread
  • Live anomaly watch: WATCH tab, status bar, MCP events
  • Repeated-block detector: BLOCKS tab, one candidate per member
  • Capture kit: canlab-cli capture, rotating segments, marks from keys, HTTP or GPIO
  • MCP tools 25 to 29

Verified for the release

  • pytest -q: 676 passed, ruff clean.
  • Binary built from canlab.spec with PyInstaller 6.22.2, smoke-tested offscreen: the window builds and stays up. Packaged as CanLab-2.1.0-linux-x86_64.tar.gz, 205 MB (2.0.0 was 214 MB).

The tag and the GitHub release are not created by this PR.

Five features, a headless capture kit and three fixed defects since
2.0.0. The interface is unchanged, so this is a minor version.

The demo footer claimed 540 tests, which was the count at 2.0.0. It is
676 now, and the number comes from the same pytest run the README
quotes.
