Release prep for v0.6.0-preview.3 — a bugfix release. Bumps <Version> and fills the CHANGELOG. No source/test changes.

Fixes (from #55): Bybit order-book WebSocket delivered no updates for non-tier depths (e.g. 20) because the topic orderbook.{depth}.{symbol} used the raw depth, but Bybit v5 spot only supports 1/50/200/1000. Requested depth is now mapped up to the nearest supported tier; depth > 1000 throws.

After merge, tag v0.6.0-preview.3 to trigger release.yml (packs the .slnx, publishes all 11 packages to NuGet, creates the GitHub release).
