It's Level/Object Floor Tris under the gear menu, like Show Tri Units.
What it does it takes the lowest Y value and color them purple, and the highest red, and colors all units in between according to the rainbow. When Show Tri Units is off, it creates a smooth gradient of the height. When on it can create "rainbow vomit" if the y-range of shown units is very small.
