I would like to update the macOS GitHub Actions runner image from macos-15 to macos-26.
This will move the macOS CI environment onto the newer macOS 26 runner image instead of continuing to use the older macOS 15 image.

This should help keep the CI environment up to date and allow compatibility issues with macOS 26 to be identified earlier.
