Rethink `summarize()` default behavior

A few questions about this:

1. Should anything be displayed other than the levels and n_reps? We used to display column means.
2. Should there be a shortcut for displaying "all means", "all variances", etc.?
3. How do we handle character return values? (probably should just ignore them)
