The docs workflow broke when GitHub's ubuntu-latest runner moved to Ubuntu 26.04, whose system Python is 3.14. Follow OpenImageIO's approach (AcademySoftwareFoundation/OpenImageIO#5536) and move to current versions instead of pinning an old Python: Sphinx 9.1, Breathe 5.1, MyST-Parser 5.1, Furo 2025.12.19, sphinx-tabs 3.5. Sphinx 9 requires Python 3.12, so docs.yml and .readthedocs.yaml now ask for 3.12. Also drop linkify-it-py from the requirements, since the MyST linkify extension is not enabled in conf.py.
