documentation: use Binder

Binder is a tool that allows hosting and running Notebooks.
The examples of the documentation should be hosted with Binder to provide a better user experience.
This will allow users to directly run a SimPlay example in a Notebook.

DoD:

• binder is used for all examples available in the documentation
• the notebooks provided by Binder are linked in the documentation
