Clean up language about downloaded metadata file in Lesson 06_reading_and_data_inspection

Lesson 06_reading_and_data_inspection still talks about "files we downloaded" and "the metadata file might be saved as .txt", this is confusing given we preloaded the data in the Posit files so everyone should have ".csv"
