cannot find view-list-symbolic despite it definitively being present on the system

Steps to Reproduce

view-list-symbolic neither shows when entering any search term in the search entry,
nor is listed in the actions

shows up along with other icons

This is a non-fd.o icon name that was only recently added to Granite: https://github.com/elementary/granite/blob/main/lib/Icons/icons.gresource.xml

We should make sure we're covering all the new Granite icons when we bump to the latest Platform
