To log in, I had to grant access to read my public information. That seemed very appropriate.

Then, immediately, a second, different prompt asks me to give access to my organizations and teams. Why is that necessary? Why is it a second request? Can I use gitential without accepting that?

Why is that necessary?

We only ask read only access to your organizations' public repos. This is the "read:org" scope. Otherwise we can't even import your public repos. Read more here

Actually you can't. In order to analyze your organizations' public repos you have to grant access.

Please note that we don't store your repositories. Just clone in a secure channel, analyze and delete them.
