Improve caveats in AI app stacks

## Goal

Strengthen the caveats in the AI entries so they are more useful for builders making tradeoff decisions.

## Areas to improve

- model cost notes
- latency and evaluation concerns
- retrieval quality warnings

## Definition of done

- Updates at least one existing AI stack
- Makes caveats more specific and practical
